The crew that works 180 guests is the same crew that works 200: 13 people, role for role. This bar staffs identically all the way from 180 to 200 guests, and 200 is the last of them and the biggest event this crew shape reaches. What moves inside that stretch is the load, not the headcount: each bartender covers 50 guests here, against the 45 they carried at 180, where it starts. The same 4 names behind the bar work a noticeably different night at each end of it.
This is also where the ice stops fitting anywhere convenient: from 200 guests the plan asks for 2 freezers so the order survives until the doors open.
