250 guests is where the fifth bartender, fourth barback and third glass cleaner come in. The crew goes from 13 people at 200 guests to 16 here, and the load per bartender drops back to 50 guests from the 50 a 200-guest bar was carrying.
This is also where the ice stops fitting anywhere convenient: from 250 guests the plan asks for 3 freezers so the order survives until the doors open.
Staffing is a range, and at 250 guests it runs 15, 16 and 18 people. Minimum keeps the drinks moving on a calm crowd; comfortable absorbs the surges, the long walk to storage and a dance floor that never sits down. Three people separate the two ends at this size, which is a whole extra station's worth of hands and a real line on the budget.
| Role | Minimum | Recommended | Comfortable |
|---|---|---|---|
| Bartenders | 4 | 5 | 7 |
| Barbacks | 4 | 4 | 4 |
| Runners | 4 | 4 | 4 |
| Glass cleaners | 3 | 3 | 3 |
| Total on shift | 15 | 16 | 18 |
If a seated dinner is served, 3 dinner runners join for that window only, taking the recommended team to 19 people while the plates are out.
Before a single drink is poured, a bar for 250 guests costs 43.5 person-hours of setup. Eight of them, the barbacks and the runners, build it from an empty table 4 hours ahead of the doors, while the glass cleaner, who builds nothing, arrives almost with the guests. Across the whole day this crew bills 139.5 hours.
| Role | People | Call time | Shift |
|---|---|---|---|
| Barbacks | 4 | 4 h before doors | 10 h |
| Runners | 4 | 4 h before doors | 10 h |
| Bartenders | 5 | 2 h before doors | 8 h |
| Glass cleaners | 3 | 30 min before doors | 6 h 30 |
Everyone stays 1 h after the last serve. The team day runs 10 h door to door, 139.5 staff hours in total.
Splitting one crew across two stations leaves both short. When Green Jar runs two simultaneous bars the floor is 3 bartenders, 2 barbacks, 3 runners and 1 glass cleaner, whatever the per-guest table says. At 250 guests you are already at or above that floor, so the second bar is free: 16 people either way. Splitting the room here costs nothing but the extra kit.

Staff
5 bartenders for a mixed bar of 250 guests at the recommended level. A cocktail-led menu for the same crowd needs 7, because shaking drinks is slower than pouring them.
Counting barbacks, runners and glass collectors: 15 people at minimum, 16 recommended and 18 to run comfortable. Which level you pick depends on how far the bar is from storage and how much queue you can live with.
Yes: 3 dinner runners who only work the dinner window, taking the recommended team from 16 to 19 people.
